These are my go-to cupcakes. I love trying new recipes for cupcakes but this one is true love.
They will impress everyone and they have beer in them c’mon. Yes I’m using Guinness again but that’s because the beer intensifies the flavor of the chocolate. I swear i’m not an alcoholic… I don’t even drink.
Today is my brother’s birthday and he loved the icing so much for the cupcakes, that he told me all he wanted for his birthday was a cake version of these cupcakes.
These cupcakes have never failed me, they always taste amazing and cream cheese icing is awesome. I add whipping cream to the icing I find it makes for a lighter and less sweet icing, but it’s up to you if you want a thicker icing skip the whipped cream.
This one was with chocolate cream cheese icing ( all I did was add a bit of cocoa) ooooOOO ahhh
Guinness Beer Cupcakes with Cream Cheese Frosting
Guinness Chocolate Cupcakes with Cream Cheese Frosting
1/2 cup Guinness
1 stick butter
3 T brown sugar
1/2 cup cocoa
1 cup flour
3/4 cup sugar
1 tsp baking soda
1/4 tsp salt
1/3 cup sour cream
8 oz. room temp. cream cheese
1 stick room temp. butter
1/4 cup of whipping cream
1 lb confectioner’s sugar
1 tsp vanilla
1. Frosting: Mix ingredients together by hand. Once blended, whip with an electric mixer until fluffy. Refrigerate for an hour or as long as possible. That’s why it’s easier to make before the cupcakes.
2. Simmer Guinness, butter, and brown sugar in saucepan until melted. Add cocoa and whisk until smooth. Remove from burner and cool slightly.
3.Mix flour, sugar, soda, and salt in a bowl. In a separate bowl, mix egg and sour cream.
4.Add cocoa mixture and beat briefly. Add flour mixture and beat briefly.
5.Pour into lined cupcake pan. Bake at 350 for 20 minutes, or until toothpick comes out clean.
