I love sweet potato’s. They are so delish and they are packed with so much goodness.
I was really craving eggs one night but I wasn’t sure what to add to them and I decided on making some sort of potato hash, I made it for myself then a week later for my family. They all loved it. This was one of those thing where I just ended up adding stuff as I went and it worked really well together. It’s really simple and satisfying
In this recipe I use fresh sage, you could you use the dried version of it but it will taste MUCH better if you use fresh sage. If you don’t like sage you could try rosemary, just the same if you don’t like blue cheese you could use goat cheese.
This is for the nights when you feel like breakfast for dinner.. which is many nights for me.
1 large onion, sliced
1 Clove of Garlic
3 strips of low fat Back Bacon
3 tbsp Olive Oil
2 to 3 Sweet Potatoes
3 tbsp fresh Sage (or rosemary)
Salt and freshly ground black pepper,to taste
3/4 Eggs ( or however hungry you are)
Blue Cheese or Goat Cheese
1. Slice onions, garlic and bacon then add to a pan with a couple tablespoons of olive oil on medium heat, cook until they are soft and fragrant. While they are cooking chop sweet potatoes in small 1/4 inch cubes in uniform size.
2. Add sweet potatoes and sage. Sprinkle salt and pepper over top. Cook on medium heat covered for 10-15 minutes until the sweet potatoes are cooked.
3. When the sweet potatoes are cooked. In a separate pan cook your eyes ( sunny side up) with a knob of butter for about 4-5 minutes. Transfer the eggs gently onto the hash. Sprinkle with blue cheese or goat cheese.
4. Serve and Enjoy!
